Easy Vegan Heart Pancakes

Description

These Vegan Valentine’s Pancakes are heart-shaped, topped with dairy-free cream,  strawberries and maple syrup. Perfect for Valentines Day. No dairy, no-eggs, easy to make.

Ingredients for the pancakes

  • 250g of plain flour (you can use gluten-free)
  • 1 & 1/2 tablespoons of baking powder
  • 3 tablespoons of caster sugar
  • 3 tablespoons of sunflower oil
  • 300ml dairy-free milk
  • 1 teaspoon of vanilla extract
  • Pink food gel (for pink pancakes)
  • Cocoa powder (for chocolate pancakes)

  • Dairy-free whipped cream
  • Fresh strawberries
  • Maple syrup

  • Vegan Nutella
  • Chopped hazelnuts
  • Maple syrup

Instructions

Method (pancakes)

  1. Sift the flour, baking powder and sugar into a medium sized mixing bowl and mix to combine.
  2. Pour in the oil, dairy-free milk and vanilla (add some strawberry flavouring for the pink pancakes to make them strawberry flavoured) Leave out the flavouring if having chocolate pancakes. Mix and combine until smooth.
  3. To make the pink pancakes, add in a drop of pink food gel and mix to combine. If you wanted chocolate pancakes, add in 2 heaped tablespoons of cocoa powder and mix to combine. Continue with the same methods below.  Set the batter aside for 5 minutes.
  4. Heat a tablespoon of sunflower oil in a frying pan and grease the inside of a medium sized ‘metal’ heart shaped cookie cutter (DO NOT use a plastic cookie cutter!). Place the cookie cutter into the middle of the pan and spoon the batter into the cutter around 1-2 tablespoons at a time, not too thick, not too thin. Cook until bubbles begin to show and burst. Lift up the cookie cutter with some kitchen tongues and flip over the pancake to cook the other side. Continue to cook until golden. Repeat for the rest of the batter (see notes for more tips & tricks).

Serving suggestions (pink pancakes)

  1. Serve the pink pancakes on a plate, drizzle over some maple syrup and a swirl of vegan whipped cream. Use a mini heart shaped cookie cutter to chomp out heart shapes from some fresh strawberries and place over the pancakes.

  1. Serve the chocolate pancakes on a plate with a drizzle of vegan Nutella, chopped hazlenuts and a light drizzle of maple syrup. 

Notes

To store: These pancakes are best made day of making and served immediately.

How to tell if pancakes are ready : You will know the pancakes are ready when bubbles pop and form holes on the top of the pancake. If a bubble comes to the surface, pops, but is filled in by more pancake batter, hold off on flipping. Make sure your pancakes are hole-y! Make sure the pancake is a golden brown before removing from the heat. 

Be sure to grease the heart cookie cutter well before using. Allow the cookie cutter to cool, then wipe down in between each pancake to make sure no batter sticks.
