Scale
- 2 sheets of store bought puff puff pastry (vegan, you can also use gluten-free)
- 2 tablespoons of red pesto
- 2 tablespoons of green pesto
- 40g of dairy-free cheese
- Pinch of chilli flakes
- Dairy-free milk (see step 7)
Instructions
- Preheat oven to 180°C fan and line a baking tray with grease proof paper.
- Roll out both puff pastry sheets over grease proof paper. Use a rolling pin to remove any crinkles in the pastry.
- Spread red pesto to one side of the pastry and green pesto to the other side, alternatively you could just use your favourite flavour pesto. Spread evenly on top of one puff pastry sheet. Use a spoon or spatula to spread it out, getting right into the edges.
- Grate some dairy-free cheese and sprinkle over the top of the pastry and pesto, in an even layer.
- With a knife or with a pizza cutter / roller, cut the puff pastry into strips large about 1 inch in width.
- Fold the strips to make the Christmas tree shape either in your hand or on the worktop. You can leave the puff pastry as it is or make them into pops with a cake pop stick inserted down the middle.
- Place on the lined trays, giving them a-little room as the pastry will puff up and spread. Brush the pastries with dairy-free milk and sprinkle over some chilli flakes (optional).
- Bake the pastries in the middle of the pre-heated oven for 10-15 minutes or until golden.
- Remove from the oven, allow to cool slightly then serve.
Notes
To store: Best enjoyed fresh, day of making. But can be stored in a air tight / sealed container in the fridge for a day. Allow to come to room temperature before enjoying.
Remove the pastry from the fridge about 10 minutes before you are ready to use it, as it will be easier to work with.
