Whats better than a Bourbon biscuit? Vegan Bourbon Brick Brownies of course! Unbelievably fudgey and rich chocolate brownies are baked with a full bourbon biscuit in each serving. Vegan, No-Egg, No-Dairy and easy to make. This is definitely going to become your favourite treat served with a cup of tea / coffee, trust me! Oh… and they’re only 7 ingredients too!

When Bourbon biscuits meet chocolate brownies, something magical happens. Bourbon biscuits are a chocolate sandwich biscuit with a chocolate filling. The are delicious on their own, but even more scrumptious when baked in a rich brownie! This brownie recipe is my go-to vegan brownie which isn’t only delicious, but has a crinkly top and classic brownie taste and texture. You won’t even be able to tell this recipe is egg-free and dairy-free!

Secret to crinkle top brownies

The secret to achieving a glossy and crinkly crust on top of your brownies is simply aquafaba.

Aquafaba (aqua = water and faba = bean) the brine from a can of chickpeas, is the ultimate ingredient in these brownies. It resembles egg white in the protein content and also the light and airy texture when whipped up. It also acts as a binding agent in this recipe, which makes the brownies super soft, and gooey on the inside, and crisp with a crinkle top on the outside.

Aquafaba is pure magic in this recipe, simply whip it up with the sugar until it reaches a soft peak. It will be very smooth and glossy, which is ready for the addition of the melted butter and chocolate mixture and dry ingredients. It’s best whipped up in a high speed machine such as stand mixer with balloon whisk attachment which will help gain air in the batter making it light as a cloud. You can also use an electric hand whisk.

How to make Vegan Bourbon Brick Brownies

Reason they’re called brick brownies is simple, they look like bricks! BUT delicious ones at that. Find the full written recipe and method in the recipe card at the bottom of the page.

  1. Make the brownie

    Start by sifting the cocoa powder and flour together in a bowl, whisk to remove any lumps or clumps. In a separate bowl, add in the aquafaba and sugar, whisk on high speed until light and airy. Melt chocolate together butter. Combine all the ingredients, along with some bourbon biscuits.

  2. Prepare the tin

    Line a 8 x 8 loose base square tin with grease proof paper. Break bourbon biscuits in half and lay in the tin neatly so the entire base of the tin is covered.

  3. Pour into the tin

    Pour the brownie batter in the tin. Use an off-set spatula or back of a spoon to carefully spread this out over the biscuits being careful not to move them around.

  4. Bake

    Place in the middle of the oven and bake for 30-35 minutes. Once baked, remove from the oven and allow to cool.

  5. Serve

    Use a sharp knife to cut the brownies into little bars, with a bourbon biscuit in each serving. Enjoy!!!

Vegan Bourbon Browie FAQ

What chocolate to use?

  • For the best flavour, use a 70% cocoa dark chocolate or above. I prefer a dark cooking chocolate which can be found in the baking aisle of most supermarkets stores. Otherwise, you can use your favourite chocolate.

Can this recipe be made gluten-free?

  • These bourbon brick brownie recipe does require wheat / gluten in the brownie and biscuits. The wheat flour really helps to maintain the amazing texture and stability.

How to store the brownies?

  • You want to keep these brownies fresh by storing in an air tight / sealed container in the fridge. Allow to come to room temperature before enjoying. Best enjoyed within 4 days of making. If stored outside the fridge, make sure they’re tightly wrapped in some plastic wrap / cling film or foil.

How to get clean cut brownies?

  • For the cleanest slices, use a large knife heated in some water, wipe of any excess water then cut. Wipe the knife off between each cut as well as this will prevent any crumbs from dragging into the net cut.

What tin to use?

  • This recipe has been made and is perfect for a 8 x 8 inch square baking tin. Even better if it’s loose base as this makes removing the brownie from the tin a breeze.

How to make Vegan Bourbon Brick Brownies – fudgey chocolate brownies with bourbon biscuits. Easy to make and delicious!


Ingredients

Ingredients for the brownie

  • 60g of cocoa powder
  • 180g of all purpose / plain plain flour
  • 170g of dairy-free dark chocolate
  • 110g of dairy-free block butter
  • 120ml of aquafaba (chickpea brine)
  • 280g of caster sugar
  • 1 pack of bourbon biscuits (3/4 for the decorative base and 1/4 crushed inside the brownie)

Instructions

Method

  1. Preheat the oven to 180℃ fan, and line a 8 x 8 inch square / loose base tin with grease proof paper.  Allow the paper to hang over the edges of the tin, this makes it easier for removing the bars when ready.
  2. Break the bourbons in half, and use them to line the base of the tin, making sure the bourbon logo is facing downwards (watch the video for visual reference here). 
  3. Sift the cocoa powder and flour together in a medium bowl.
  4. Fill a small saucepan 1/4 full with water and place on the hob over medium heat. Add the dairy-free chocolate and butter into a heat proof bowl. Place the bowl over the pan, creating a bain-marie. Allow the chocolate and butter to melt together, stirring with a heat proof spatula. Remove from the heat and allow to cool for a few minutes while you make prepare the aquafaba.
  5. Add the aquafaba and sugar into a medium sized mixing bowl and whip up on high speed for around 5 minutes until thick and glossy. I use a stand mixer with balloon whisk attachment. A electric hand whisk will work great too. Whip on high speed, the aquafaba mixture should be thick enough that when it drips into the bowl, the mixture should ribbon off the mixer.
  6. Pour the chocolate and butter mixture over the aquafaba, and carefully fold together with a spatula. Make sure to be very gentle with this step as you want to keep as much air in the mixture as possible.
  7. Once combined, sift in the flour and cocoa powder. Again, fold this in with a spatula until a rich and thick brownie batter forms.
  8. Break up a few bourbon biscuits and sprinkle into the batter, fold to combine.
  9. Pour the brownie batter into the lined tin and level off with an off-set spatula.
  10. Place the tin into the middle of the oven and bake for 30-35 minutes. If you want a more fudgey brownie, you may want to underbake by 5 minutes!
  11. Once baked, remove the tin from the oven and allow to cool fully on a wire rack. TIP: Keep the brownie in the tin while it’s cooling. This will help it keeps it’s shape and will also lock in some of the moisture, which will help with the chewy texture.
  12. Use a sharp knife to cut the brownies into little bars. Cut the brownies so each has a bourbon biscuit on top.
  13. Serve and enjoy!

Notes

What dairy-free butter to use? My favourite vegan friendly butters are Naturli Vegan Block and Flora Plant Based Alternative. Both can be found in most large uk supermarkets.

      These were so good good! I also made them with biscoff biscuits and a little spread drizzled on the top. I froze them for a few days and they came our perfect.
