Ingredients you’ll need:
This recipe is vegan, no-bake and requires minimal ingredients for optimal taste, flavour and texture. They melt in the mouth and are super indulgent. Here are the ingredients you’ll need to make them. Find the full written recipe and quantities in the recipe card at the bottom of the page.
- Dark chocolate: Best to use a high quality, 70% or above dairy-free dark chocolate. This will create a rich and decadent flavour.
- Silken tofu: Only use silken tofu, and not firm tofu as the texture are completely different. Make sure to drain the liquid from the silken tofu. This will create a ultra thick and creamy mousse.
- Dairy-free cream: Use a thick vegan cream / double cream, my go-to is The Coconut Collaborative Double Cream. You can also use a thick white coconut cream.
- Caster sugar: Use a fine, white sugar for this recipe. Granulated will make the mousse grainy in texture so make sure its a fine sugar.
- Cocoa powder: Adds added richness as well as thickening up the mousse.
- Cornstarch / cornflour: Helps to thicken the mousse.
- St Dalfour Orange Marmalade: To give the mousse the best orange flavour, I incorporated the St Dalfour Orange Marmalade. This marmalade is vegan friendly, sweetened with fresh fruit juices and is full of fresh citrus flavour. It also contains orange peel which adds extra flavour and freshness. Chocolate Orange Mousse Jack-O-Lantern tips and tricks
Here are some bullet-point tips and tricks to make a rich and creamy vegan chocolate orange mousse:
- Use high-quality dark chocolate (at least 70% cocoa) for a deep, rich chocolate flavor.
- Silken tofu makes for an excellent base for mousse, giving a smooth texture without any strong flavour.
- A few drops of orange extract can intensify the orange flavour if needed.
- Chill the mousse in the fridge for at least 4 hours to set the flavours and firm up the texture.
- Top with a sprinkle of fresh orange zest, shaved dark chocolate, or a dusting of cocoa powder for an elegant presentation.
- Serve in either oranges or dessert glasses to showcase the mousse’s rich, creamy texture and make it easy to serve.
- Store the mousse an airtight container in the fridge for up to 3 days.
- Avoid freezing as it may alter the mousse’s creamy texture once thawed out.

Description

Ingredients
Ingredients for the mousse
- 350g of dairy-free dark chocolate
- 350g of silken tofu
- 100g of caster sugar
- 60ml of dairy-free cream
- 30g of cocoa powder
- 2 tablespoons of cornstarch / cornflour
- 80g of St Dalfour Orange Marmalade

- 4 Large oranges (to serve)
Instructions
Method (carve the oranges)
- Place the (serving) oranges flat on your worktop so you know it will sit correctly when filled with the mousse.
- Use a sharp knife to cut the tops off the oranges.
- Hollow out the flesh of the orange (you can eat the orange as a snack to prevent waste, or store in a container in the fridge).
- Wash and dry the orange, making sure to remove as much pith as possible.
- Draw the face you want to carve with a pen, or free cut. Cut the face with a sharp knife. Tip: Use a smaller sharp knife to get more intricate details (refer to video for reference).
- Keep the oranges fresh by storing in an air tight container in the fridge prior to filling. Only cut within a day of serving to prevent the oranges turning brown in colour.
Method (mousse and assemble)
- Melt the chocolate in a microwave in 30 second intervals, or on the hob using a bain-marie (a saucepan placed on the hob filled with water with a heat proof bowl on top. Just make sure the bowl doesn’t touch the water). Stir the chocolate until fully melted and smooth.
- Let the chocolate cool for a few minutes, then add it into a high speed blender along with the silken tofu, sugar, cream, cocoa powder, cornstarch and orange marmalade. This is where you can add a optional extra drop of orange extract for a stronger ‘orange’ flavour. Blend until smooth and creamy, scraping down the sides.
- Pour the mousse into a mixing bowl / bowl and chill for at least 3-4 hours or until the mousse is firm. You want the mousse to be firm when piping in the oranges so it doesn’t immediately ooze out the ‘jack-o-lantern’ face.
- Once the mousse is firm, transfer into a piping bag, and pipe into the oranges.
- Place the oranges back into the fridge and allow to set firm before serving.
- Serve with a spoon, and enjoy!!!
Notes
Serving suggestions: Serve chilled with a small spoon.
Store the mousse an airtight container in the fridge for up to 3 days.
Do not freeze or this can effect the texture of the mousse (adds too much moisture).
