Vegan Pine Cone Truffles

I’m so excited to be showing you how to make these super cute vegan pine cone truffles. These little truffles simply scream Christmas!!!! From their indulgence to wintery aesthetic, they are simply divine. They’re the perfect blend of creamy ‘melt in the mouth’ truffle and indulgent rich chocolate. The truffles are like little edible pine cones. Made with a 3 ingredient chocolate biscuit filling, cornflakes, a rich chocolate coating and a sprinkle of ‘snow (icing / powdered sugar) on top to add to the winter look.

Ingredients you’ll need to make these truffles:

  • Dairy-free cream cheese: Make sure to use a good quality dairy-free cream cheese. My go-to’s are Violife Original Creamy and supermarkets own branded vegan cream cheese. If situated in the US, Mykonos is great!
  • Biscuits: I used the Tesco Free From Bourbon Biscuits, you can use any vegan friendly chocolate biscuit. You can also switch to a gluten-free biscuit to make this recipe gluten-free.
  • Cocoa powder: The cocoa powder helps to add a richness to the truffle filling and thicken it up.
  • Dairy-free dark chocolate: For extra richness to these vegan pine cone truffles, a 70% or above dairy-free dark chocolate works best. Alternatively, you could use a vegan milk chocolate if preferred.
  • Cornflakes: Not all cornflakes are vegan due to them containing Vitamin D. I used the ASDA Free From Corn Flakes, which are also gluten-free.

No-Bake Pinecone Truffles

Description

These chocolate cornflake pinecone truffles are the perfect Christmas treat. They’re easy to make, no-bake and only contain 5 ingredients. You’ll love making them!


Ingredients

Units Scale
  • 150g of chocolate biscuits (I use vegan Bourbon biscuits, you can use gluten-free)
  • 60g of dairy-free cream cheese
  • 1 tablespoon of cocoa powder
  • 200g of dairy-free dark chocolate
  • Vegan friendly cornflakes (you can use gluten-free)

Instructions

  1. Line a baking tray with greaseproof paper. Set aside.
  2. Place the biscuits in a food processor or blender and whizz up until crumb-like. You could crush them using a rolling pin if you don’t have an electric mixer.
  3. Pour the biscuit crumbs into a large mixing bowl & add in the dairy-free cream cheese and cocoa powder. Mix together until fully incorporated. When you press the truffle mixture together, it should stick and form a kind of ball.
  4. With clean hands, roll the mixture between your palms until you have small ‘truffle’ like balls and place them onto a lined tray. I like to roll them into 20g balls. Pinch the top of the truffle ball to make it into an ‘oval / pinecone shape’.
  5. Start at the base of the truffle, pressing cornflakes into the truffle, working your way up to the top, getting smaller and smaller as you go. You may need to find corresponding sized cornflakes (refer to video for example)
  6. Pop the tray into the freezer and allow to set for around 25 minutes. You want the truffles firm so when you coat in chocolate, the cornflakes don’t fall off.
  7. About 5 minutes before the balls are ready to come out of the freezer, pop the dark chocolate into a bowl on top of a saucepan with boiling water, creating a bain-marie and allow the chocolate to fully melt. You can alternatively melt in the microwave in 20 second intervals.
  8. Remove the truffle balls out of the freezer & place on a fork, using a spoon to spoon the chocolate over each truffle, tap to drip off any excess chocolate back into the bowl.
  9. Place the truffles back onto the lined tray and place them into the freezer to set. As the truffles are very cold, the chocolate will set almost immediately so they’ll only need to be in the freezer for around 5-10 minutes.
  10. Dust each truffle with a light sprinkle of snow (icing sugar) before serving.
  11. Serve and enjoy!

Notes

To store: Keep the truffles fresh by storing in an air-tight / sealed container in the fridge and enjoy chilled. Don’t leave out in the sun or in a warm atmosphere as they may melt.

They can easily be frozen for enjoying at a later date.

    Could I do it with not vegan ingredients?

      As i only bake and recipe test with vegan ingredients, i wouldnt be able to say if it would work or not. And i wouldnt want to promote non vegan ingredient’s xx
