3 ingredient snowman & snowdog cookies recipe

Vegan, gluten-free, wheat-free, quick & easy

‘We’re walking in the air’….. I’m literally on cloud 9 with these cookies!!

Delicious 3 ingredient cookies which taste like shortbread with a vegan royal icing decoration. Perfect for the festive season.

You know it’s Christmas when ‘The Snowman’ come’s on TV. ⛄

I have lovingly created edible versions of the Raymond Briggs characters from ‘The Snowman & Snowdog’ which is one of my favourite festive films and it only seemed right to created a treat based on them!

I picked up ‘The Snowman & Snowdog’ cookie cutters from John Lewis and had to use them immediately, they’re adorable.

These cookies are simple to make, taste delicious and look so cute decorated with colourful, homemade vegan royal icing.

They would make lovely edible gifts. I am sure whoever you give these delicious treats to will be very impressed!!!

Make sure you leave some out for Santa πŸ™‚

Preparation- 5 minutes

Baking time- 9-10 minutes

Makes- 15-20

Level- Easy

Ingredients for the cookies

-200g of plain flour

-100g of coconut oil (Melted)

-5 tablespoons of maple syrup

To make the cookies

Step 1- Pre-heat your oven to 180 degrees c and line a baking tray with grease proof paper.

Step 2- In a mixing bowl, combine the plain flour, melted coconut oil and maple syrup.

 Bring together with your hands until a dough forms.

Add more flour if too wet or coconut oil if too dry. You want it to be a smooth dough.


Step 3- Roll out the dough then using the snowman & snowdog cookie cutters, cut out the shapes and place onto the lined tray.

Step 4- Pop the cookies into the oven and bake for 9-10 minutes until golden in colour.

Step 5- Once baked, carefully place them onto a cooling rack and allow them to cool fully before icing.


To make the royal icing

I separated my royal icing into a few different bowls. I left some royal icing plain white for the body, adding in orange food colouring for the noses, pink for the ear, green for the hat, scarf and ear, purple for the mitten  & sock on the snowdog and black for the eyes & buttons.  I used a piping bag fitted with a small round tip nozzle to create the details.

Store in a sealed container and best eaten within a few days! The royal icing hardens at room temperature.

    Hi, what kind of flour did you use, it says plain flour but that normally is made of wheat.

    Hello, I used a glutenfree plain flour, you could also use coconut flour if you wanted too πŸ™‚ xx
