Summer has officially left us, so what better way to celebrate a new season than with some crunchy honeycomb?!!!
Honeycomb is surprisingly quick & easy to make and is perfect for a sweet tooth.
I decided to coat my scrumptious honeycomb in chocolate which makes it taste EXACTLY like a Crunchy bar!!!! It’s actually unreal how good this honeycomb is.
You could even mix it into ice cream, sprinkle it over cupcakes and cakes or what I like to do, coat it in delicious dark chocolate.

Ingredients
-125g of syrup (I use Sweet Freedomfruit syrup)
-200g of golden caster sugar
-30ml of water
-3 & 1/2 teaspoon of bicarbonate of soda
-Dairy-free dark chocolate

Step 1- Line a square baking tray with greaseproof paper.
Step 2- In a medium saucepan, add in the syrup, sugar and water and heat on high.
You want to heat the mixture until it reaches 149 degrees c, which is known as the ‘hard crack’ stage.
Step 3- When its reached 149 degrees c, turn off the heat and immediately add in the bicarbonate of soda.
Step 4- Whisk the bicarbonate of soda in with a balloon whisk until the mixture foams, doubles in size and is bubble.
Step 6- Once combined, immediately pour onto the lined tray and do NOT spread out or level as it will lose all of the air bubbles.
Step 7- Place the tray into a cool area/at room temperature to set.
This will take about 1 hour. DO NOT touch it!
Step 8- Once hard, break into shards and dunk into dark chocolate (optional)
Store in a sealed container in the fridge.
Eat within a few days!

Hi. I made this as directed and it hasn't quite worked out. The honeycomb has not set and all I can taste is bicarb- with the taste staying in your mouth quite a while. Is there something that could have gone wrong?

Hello, Yes! This happened to me when i was testing out the recipe! You need to heat the syrup, sugar and water on med-high until its a dark-ish golden colour (About 4-5 minutes). The mixture should be at 300 degrees. You need to get that perfect in order for it to work!! ๐ x
