Fruity ‘Winnie the Pooh’ tartlets recipe

Vegan, gluten-free, wheat-free.

Quick & easy ‘Winnie the Pooh’ inspired tartlets, each with a different fruity flavour, in a 3 ingredient crust! 

How sweet are these little tarts?! 

As the new ‘Christopher Robin’ movie is coming out, I’ve been seeing a lot of Disney inspired treats and wanted to make my own, vegan edition! 

These charming desserts are perfect for Disney lovers (like myself-haha) for birthdays, a themed occasion or just to get creative!

They’re simple, easy and fun to make!

Preparation- 5 minutes

Baking time- 9-10 minutes

Level- Easy

Ingredients for the base

-400g of plain flour (I use gluten-free)

-200g of coconut oil (Melted)

-5 tablespoons of maple syrup

Ingredients for the fillings

-100g of dairy-free white chocolate 

-1 can of coconut cream (cream only)

-Orange food gel + orange extract

-Purple food gel + blueberry jam

-Yellow food gel + lemon extract

-Pink food gel + strawberry jam

-Vegan royal icing (Get my recipe here)

To make the base

Step 1- Pre-heat your oven to 180 degrees c and grease tartlet tins with coconut oil.

Step 2- In a mixing bowl, combine the plain flour, melted coconut oil and maple syrup.

 Bring together with your hands until a dough forms.

Add more flour if too wet or coconut oil if too dry. You want it to be a smooth dough.

Step 3- Press the dough into the greased tins and prick the bases with a fork.

Step 4- Pop the tartlet cases into the oven and bake for 9-10 minutes until golden in colour.

Step 5- Once baked, carefully place them onto a cooling rack and allow them to cool fully before filling.

To make the filling

Step 1- Melt the chocolate along with a teaspoon of coconut oil until smooth and allow to cool.

Step 2- Place the coconut cream into a mixing bowl and add in the cooled chocolate and whisk to combine.

Step 3- Separate the mixture evenly between 4 bowls.

First bowl- Add a drop of orange food gel along with some orange extract and mix until combined.

Second bowl- Add a drop of purple food gel along with some blueberry jam and mix until combined.

Third bowl- Add a drop of yellow food colouring along with some lemon extract and mix until combined.

Fourth bowl- Add a drop of pink food gel along with strawberry jam and mix until combined.

Step 3- Pour the fillings into the tartlet cases and place into the fridge overnight to set.

I decorated my tartlets with my homemade vegan royal icing.
