Vegan Caramel Apple Pastries

These vegan caramel apple pastries are elegant, easy to make and delicious. Flakey puff pastry is wrapped around fresh apple slices coated in cinnamon sugar served with caramel sauce. Vegan, no-egg, no-dairy and only 5 ingredients. The perfect treat for Autumn / Fall.

Caramel Apple Pastries

Say hello to an easy dessert that looks super impressive!! The buttery, flakey and crisp pastry is filled with a soft, sweet and spiced cinnamon sugar apples. They’re easy, tasty and great baking fun! I mean, what’s not to love? Crisp pastry, soft apples, cinnamon AND caramel – it’s my autumnal DREAM!

Why you’ll love these pastries:

  • Vegan friendly : This recipe doesn’t contain any animal derived ingredients!
  • Ready rolled pastry : To make things super quick and convenient, puff pastry sheets are used. They are perfect and will save you so much time. I use the brand Jus-Rol.
  • They’re gluten-free : This recipe can be made gluten-free. Make sure to use gluten-free puff pastry sheets. Again, I use the vegan and gluten-free friendly puff pastry sheets from Jus-Rol.
  • Super fun : From the making process to design, these little apples are super fun to make. Great for kids to get involved with baking!
  • They’ll get your taste buds tingling : Trust me, one of these isn’t enough! You’ll be going back for seconds, or even thirds! They’re SO GOOD!
  • Caramel drizzle : Serve the pastries with store bought caramel, or even better..use homemade. My 3 ingredient vegan caramel sauce is a match made in heaven for this recipe!
  • Super easy : Unlike a whole apple pie, there is no rolling, lining tart tins or dishes. All you have to do is wrap the pastry around the the slices of cinnamon sugar covered apples. Bake until golden brown then drizzle with caramel. So simple!

Ingredients you’ll need

Heres’ what you’ll need for this recipe:

  • Puff pastry : Store bought puff pastry sheets are the star of the show. You want to use a good quality puff pastry. If you wanted this recipe wheat-free, be sure to use gluten-free puff pastry. My favourite is JusRol.
  • Apples : You want to make sure to use an apple that won’t become mushy when baked. The best apples for baking are Granny Smith, Bramley Apples, Honey Crisp and Pink Lady.
  • Ground cinnamon : Naturally, cinnamon is a perfect match with apples. Be sure that your ground cinnamon is fresh.
  • Sugar : You can use white granulated sugar or a fine white / caster sugar. This will help sweeten the pastries and create a delicious cinnamon sugar.
  • Dairy-free milk : You can use any dairy-free milk for this recipe including oat, soya, cashew and almond. The milk helps the pastry shapes stick and is brushed over the pastry before baked to help golden the pastry.
  • Caramel : This is optional drizzled on top of the pastries, but oh my…. don’t leave it out! It makes this dessert taste incredible! I use my 3 ingredient vegan caramel which pairs beautifully with the cinnamon spice.

How to make apple pastries

  1. Prepare the pastry

    Roll out the puff pastry sheets. Using a pizza cutter or knife, cut out strips of the pastry. Use leaf cookie cutters / fondant presses to chomp out some leaf shapes.

  2. Apples and cinnamon sugar

    In a bowl, mix together the sugar and cinnamon. Cut the apple into thick slices. Use the end of a piping tip to chomp out a circle in the middle. Coat the apple ‘doughnut’ shape in the cinnamon sugar.

  3. Wrap the apple

    Wrap the pastry strips around the apple slices until the apples are coated. Brush the tops with some dairy-free milk, stick on the leaf decorations (optional), and sprinkle some more cinnamon sugar on top.

  4. Bake

    Place the pastries on a lined baking tray and bake in the middle of the oven until flakey and golden brown. Allow to cool, then serve with caramel sauce.

Vegan Caramel Apple Puff Pastries Tart are an easy, simple dessert using store bought puff pastry and fresh apples – Gluten-free too!

  • 2 sheets of puff pastry
  • 30g of caster / granulated sugar
  • 2 heaped teaspoons of ground cinnamon or sweet cinnamon
  • 4 large Apples
  • Dairy-free milk
  • Vegan caramel sauce (optional)

Instructions

Method

  1. Preheat oven to 180°C fan and line 2 baking trays with grease proof paper.
  2. Un-roll the puff pastry sheets and use a rolling pin to roll them flat to remove any creases in the pastry.
  3. Using a pizza cutter or knife, cut out strips of the pastry until approximately 1/2 inch thick. With any left over pastry,  use leaf cookie cutters / fondant presses to chomp out some leaf shapes. Set the pastry aside.
  4. In a bowl, mix together the sugar and ground cinnamon. Stir to combine.
  5. Wash the apples then cut each apple into thick slices. Use the end of a piping tip or apple corer to chomp out a circle in the middle. Coat the apple ‘doughnut’ shape in the cinnamon sugar.
  6. Wrap the pastry strips around each apple slice until the apple is fully covered, using milk to help stick.
  7. Brush the tops with some dairy-free milk, stick on the leaf decorations (optional), and sprinkle some more cinnamon sugar on top.
  8. Place the pastries on a lined baking trays. As the pastry will puff up, make sure the pastries have some room to spread out on the trays. Bake in the middle of the pre-heated oven for 12-15 minutes or until puffed up, flakey and golden brown in colour. Once baked, remove from the oven and allow the pastries to cool on the tray before using a spatula to lift them off the tray and on to a wire rack to cool fully.  
  9. Once cool and ready to eat, serve with a drizzle of vegan caramel sauce.

Notes

To store: These pastries are best served and enjoyed fresh, day of making. You can store them in the fridge in a air tight / sealed container for up to 2 days.

    Made these tonight. I prepped them and put them in the fridge right before we ate dinner so that I could put them in the oven ready to go. I did have to bake them about 10-12 minutes longer but they were SO GOOD! A little labor of love wrapping them all but so very worth it!

    delicious! I’d love to make these for the holidays but we will be driving out of state. any suggestions? should I bake them first then warm them up? should I prep them then bake them later? I want to be as fresh as possible but don’t want to get in anyone’s way. thank you so much!

      Thanks Kim. First of all, Have a safe trip and second of all, these really are best to be made fresh and served day of making for best CRUNCH and flakey factor. You can make them a day ahead but as i said, they’ll loose their crispness.. thats just what happens with puff pastry! Hope this helps, happy baking xxx

    This is such a fun recipe! our puff pastry was a bit dried out with our first try, so it kept breaking when we wrapped it. they still turned out super yummy and the Caramel sauce was a fabulous topper! We will make again!

    My teen son has been baking since he was 3 yr old and when I showed him your Instagram he was inspired.
    He loves pumpkin everything but he eats apples every day. So he made these this weekend and they were perfect and delicious. I want to say thank you for your videos/reels. My son is 100% visual, which helped us both know the apple’s right thickness, which would be a crucial part of this recipe. we used granny smith and it was just so delicious.     I was so impressed with how this came out. It was like I bought from a professional bakery. I bit into the pastry and couldn’t believe how flaky and perfect and flavorful it was! So so good! I also brushed melted butter on the dough to help it stay together rather than nondairy milk and it turned out wonderful. All around 5 out 5!

    So glad to see I’m not the only one who struggled with wrapping the apples! Milk didn’t help. Used the tiniest bit but everything just got slimey. And then the pastry continued to break and slide off anyway.
    Sure it’ll taste ok, but it looks an absolute mess and making these turned out to be a bit of a nightmare.

    Unfortunately, the puff pastry you recommended is NOT gluten free… first ingredient is wheat flour… not suitable for those with celiac or gluten allergy…

      Hello, Jusrol stock a vegan AND gluten-free puff pastry. Its in a red packaging, made with rice and pea flour. I find mine in sainsburys 🙂 Hope this helps x
