These Vegan Chocolate Bat Cookies are the perfect Halloween treat. Simple chocolate cookies with a vegan ‘nutella’ filling are made into adorable bats or halloween with icing eyes. Vegan, No-Egg, No-Dairy, super easy to make and only 6 ingredients!

Vegan Chocolate Bat Cookies

If you’re after a simple Halloween treat that is easy to make and sure to impress, this is it! Two rich and buttery chocolate cookies with a coating of crushed Oreo crumbs are then filled with a delicious cocoa and hazelnut spread before being topped with some iced googley eyes to make them super spooky for Halloween. They are great fun to make and will have everyone going back for seconds! They are great served with a glass of dairy-free milk or hot coco!

What ingredients you’ll need:

You’ll only need a few basic baking ingredients to make these vegan chocolate bat cookies. If you don’t have them to hand, they’re easy to find in most supermarkets / grocery stores.

  • Dairy-free block butter – Make sure to use vegan block butter which is cold / been chilling in the fridge.
  • Caster sugar – Use a fine, white sugar for this recipe.
  • All purpose / plain flour.
  • Ice-water – Cold water with some ice-cubes inside. Use a teaspoon at a time to get the dough to the perfect consistency.
  • Cocoa powder – The darker the better chocolaty flavour!
  • Oreo cookies – Regular Oreo’s work fine, I wouldn’t suggest double stuffed, a flavour or golden.
  • Vegan Nutella – The vegan friendly Nutella alternative I use is the Natures Store Hazelnut and cocoa spread. Alot of brands now have their own range of ‘Nutella’. Always make sure the products you’re using are vegan!
  • Candy eyes – I make my own using icing sugar and aquafaba (chickpea brine), along with some black food gel.

  1. Cookies

    Mix together all the ingredients until a dough forms. Wrap in grease proof paper and chill in the fridge. Roll out between two sheets of grease proof paper and chomp out the shapes using a bat cookie cutter.

  2. Oreo crumbs

    Blitz the Oreo’s in a blender then press into the cookie bats. Bake in the oven for 10-12 minutes, allow to cool fully.

  3. Filling

    Transfer the vegan ‘Nutella’ into a piping bag and snip off the tip. Pipe a swirl of the spread to half of the cookies then press a cookie on top making a sandwich.

  4. Eyes

    Use a dot of the vegan ‘Nutella’ and stick on the candy eyes.

  5. Tuck in!

    Serve and enjoy! Delicious with a hot coco or tea / coffee.

Spooky Vegan Chocolate Bat Cookies with a ‘Nutella’ Filling and sugar eyes are delicious, easy to make and perfect for Halloween! 


Ingredients

Ingredients for the cookies

  • 200g of dairy-free block butter (cold and cubed)
  • 100g of caster sugar
  • 300g of all purpose / plain flour
  • 40g of cocoa powder
  • 8 Oreos (crushed)

Ingredients for the filling

  • 4 tablespoons of vegan ‘Nutella’ (I use Natures Store Hazelnut and Cocoa Spread)

Instructions

Method (cookies)

  1. Cream the butter and sugar together until pale and fluffy. Sift in the flour and cocoa powder, mix into a thick dough. You may want to add in a teaspoon or two of ice-water to get it to the right ‘dough’ consistency. Transfer the dough into plastic wrap or baking paper and chill in the fridge for at least 40 minutes -1 hour to firm up.
  2. In the meantime, preheat the oven to 170°C fan and line a baking tray with grease proof paper.
  3. Once the dough is chilled and firm to the touch, roll out to approximately ½ cm thickness on a heavily floured work surface (this prevents the dough from sticking). Cut into shapes using a bat cookie cutter. Place the shapes on the lined baking tray.
  4. Add the Oreos into a blender and blitz until fine crumb like. Press the Oreo crumbs to the top of half of the cookies.
  5. Bake in the middle of the oven for 10-12 minutes. You can even turn the tray half way through to ensure an even baking.
  6. Once baked, remove from the oven and allow the cookies to cool slightly on the tray before transferring to a wire rack. Repeat until all the cookies are baked.

Method (filling)

  1. Add a few tablespoons of vegan ‘Nutella’ into a piping bag and snip off the tip. 
  2. Pipe a swirl of the spread to the cookies without the Oreo crumbs on (we do this as the spread won’t stick very well to the crumbs!). Sandwich a Oreo crumb coated bat cookie on top. 
  3. Press down gently so that the sandwich cookies stick together.
  4. Use a dot of the vegan ‘Nutella’ to stick on the royal icing eyes. Get the recipe for the eyes here.

Notes

To store: Keep the cookeis fresh by storing them in the fridge in a sealed / air tight container. Best enjoyed within 3-4 days of making. 

If you can’t find candy eyes in the supermarkets or online, and are unable to make the homemade vegan royal icing eyes, a great alternative option if to use a white chocolate button and pipe on some dark chocolate to the middle. You could even stick on a mini chocolate chip.
