Impress someone special (or yourself) this Valentines day with the most rich, fudgy, gooey and overall scrumptious brownie OF ALL TIME! This brownie is made in one bowl, served in a single ramekin, no sharing allowed with this dessert – haha! It comes together in minutes, so when you’ve got a craving for a brownie, but not want to make a whole batch… this is for you!

No words can even explain how delicious this recipe is! I mean… just look at the photos and you can see how gooey and moreish the brownie is! It’s one of those desserts when you know how to make it, you’ll be making it every single time you’re in need of a-little chocolate goodness!

How to make a single serve brownie:

It’s in the name, single serve meaning.. this recipe is just for one! Unlike traditional brownies baked in a tray / lined tin, this brownie recipe makes 1 and is baked to perfection in a small oven proof ramekin. Find the full written recipe with method in the recipe card at the bottom of the page!

  1. Make the brownie batter

    Melt the chocolate and combine with the condensed milk and room temperature milk. Sift in the flour, baking powder and chocolate chips.

  2. Pour into ramekin

    Pour half of the brownie batter into the base of the ramekin, spoon on some vegan ‘nutella’ / chocolate spread, then cover with the remaining batter.

  3. Bake

    Sprinkle with some chocolate chips then bake.

  4. Serving

    Serve with a scoop of dairy-free ice-cream and drizzle of more melted chocolate spread!!

Tips for making the perfect single serve vegan brownie:

This single serve brownie recipe is fool proof, BUT I want to make sure you are guaranteed a perfectly chocolatey brownie, so here are a few tips you’ll need to set you up for success:

  • Be precise with your measurements – For best results, use a set of kitchen scales. Cup measurements isn’t precise so i always highly recommend using grams! It’s the best way to ensure you’re making the perfect bake!
  • Don’t over-bake – It’s best to underbake brownies slightly so they retain their fudgy, moist texture. If you over-bake, they will become cake like which isn’t what you’re after!
  • Use good quality chocolate – I recommend using a 70% and above dark chocolate for best results. This will make the brownie dark and ultra rich.
  • Bake with a layer of chocolate spread – To keep the brownie super fudgy, add some vegan ‘Nutella’ or chocolate spread into the middle of the brownie, with extra batter on top. This will create a puddle of melted chocolate in the middle which is out of this world good!!!
  • Make sure the milk is at room temperature – To prevent a thick and dense texture, you want the milk to be at room temperature. This gets mixed with the melted chocolate so if it’s direct from the fridge, it could cause the chocolate so seize up. Allow it to sit on your kitchen counter for an hour or two prior to baking.

The BEST EVER rich, fudgy and chocolate stuffed single serve brownie, perfect for yourself at Valentines day! Vegan, Dairy-free, Egg-free and only 6 ingredient! 


Ingredients

Ingredients for the brownie

  • 80g of dairy-free dark chocolate
  • 70g of vegan condensed milk (room temperature)
  • 20ml of dairy-free milk (room temperature)
  • 40g of all purpose / plain flour
  • 1/2 teaspoon of baking powder
  • 20g of dairy-free dark chocolate chips
  • Vegan nutella (optional, I use the brand Natures store)

Instructions

Method

  1. Pre-heat oven to 180 degrees c fan and lightly grease a 0.3L (mini) ramekin with some vegan butter.
  2. Fill a small saucepan with water, place on the hob over low / medium heat. Add the chocolate into a heat proof bowl, set the bowl over the pan and allow the chocolate to melt.
  3. Once melted, pour into a bowl along with the condensed milk and room temperature milk, stir to combine. 
  4. Sift in the flour and baking powder until a gooey, shiny brownie batter.
  5. Fold in the chocolate chips.
  6. Pour the batter into the ramekin about half way. Spoon in some vegan ‘nutella’ / chocolate spread, then cover with the remaining brownie batter.
  7. Top with some extra chocolate chips.
  8. Place into the middle of the oven and bake for 15-18 minutes. The top of the brownie will be raised and shiny.
  9. Remove from the oven, enjoy hot or serve warm with a scoop of dairy-free ice-cream and more melted chocolate spread.

Notes

To store: The brownie is best served day of making, and warm! It will be super gooey and fudgy this way. Alternatively, you can store in the fridge and lightly heat up in the oven for a few minutes to melt the chocolate again, but I’m sure they’ll be no left overs!!

    This looks like such a delicious and easy recipe for single-serve vegan brownies! I love how it only uses a few ingredients. I was wondering if you’ve tried making this recipe with gluten-free flour? I’m always looking for ways to make my treats more allergy-friendly.
