Mini Vegan Heart Shape Pizzas

I wanted to create something savoury yet fun and still in keeping with my style of ‘cute’ bakes. These pizzas hit just the spot when it comes to taste, texture, flavour and overall appearance. Puff pastry is cut into hearts using a cookie cutter then decorated with the usual ‘pizza’ toppings, including vegan cheese and heart shaped plant based ‘meats’. It’s a great valentines activity to make with loved ones!

Ingredients you’ll need:

This recipe contains only 5 simple, ingredients. I’ve listed the products including brands below (always triple check ingredients before using to ensure they are free from animal derived ingredients!).

  • Puff pastry: To make this recipe super simple and easy, I use ready rolled puff pastry from Jus-Rol. This recipe can be made gluten-free by using gluten-free pastry!
  • Pesto: Be sure the pesto you use is vegan friendly as most contain milk / cheese. I use Sacla Red Pesto which is dairy, gluten and wheat-free!
  • Vegan cheese: Make sure the cheese you use is dairy-free. My go-to vegan cheese is Violife or Cathedral City. I use shredded cheese, alternatively you can use cheese slices to cut out the heart shapes to place on the pizza.
  • Vegan / plant based meat substitute: Top the pizzas with whatever you fancy. I opted for a mixture of ‘Quorn Vegan Pepperoni’ and ‘Squeaky Bean Vegan Pastrami Style Sandwich Slices’. Use mini heart plungers to chomp out mini hearts to the pizzas. They look super cute!!

Description

How to make easy vegan mini valentines day pizzas in the shape of hearts, perfect for sharing with your loved ones!

Ingredients

Scale
  • 1 sheet of ready roll puff pastry (I use Jus-Rol)
  • 1 jar of vegan pesto (I use Sacla Red vegan Pesto)
  • Dairy-free cheese (I use Violife)
  • Plant based meat alternatives
  • Dairy-free milk (if needed)

Instructions

  1. Pre-heat the oven to 180°C fan and line a baking tray with grease proof paper.
  2. Unroll the pastry sheet, use a rolling pin to roll out any folds or creases.
  3. Use a medium sized heart shaped cookie cutter to chomp out hearts and place spaced out on the lined baking tray.
  4. Spread vegan pesto over each pastry heart, leaving a small border around the pastries to prevent overfilling.
  5. Sprinkle some grated dairy-free cheese over the pesto.
  6. Use heart plungers or mini heart cookie cutters to chomp out mini shapes from the vegan meat alternatives. Place on each pastry.
  7. Optional step: Brush dairy-free milk around the edges of the pastry to help with browning and crispiness.
  8. Bake in the middle of the oven for 10 minutes or until puffed up, golden and cheese cheese has melted.
  9. Remove from the oven and allow to cool for a few minutes before plating up.
  10. Serve with a sprinkle of ground black pepper, basil leaf or drizzle of some hot sauce.
  11. Enjoy!

Notes

Storage: Storing puff pastry pizzas depends on whether they are baked or unbaked. Best enjoyed fresh, baked day of making.

Baked: Allow to cool, store in an airtight / sealed container in the fridge for up to 3 days. Reheat in the oven at 180°C fan until crisp.

Unbaked: Assemble then freeze on a tray, transfer to a freezer-safe container. Bake from frozen, adding a few extra minutes to the cooking time.
